Melissa is one half of Hemsley + Hemsley, sisters, co-authors, TV presenters and entrepreneurs with their own café at Selfridges London. Committed to spreading the message of healthy eating, in this session she will discuss some of the ways you can make the meals you deserve.

Madhur has made a career of educating aspiring cooks in the art of Indian food. To mark the India-UAE Cultural Celebrations: a cultural partnership for a positive future, she will take us on a journey to trace the influence of Indian cookery. Hear about culinary adventures around the world, tales of her exciting life as actress and author, and even some of her prized cooking secrets to making curry easy!

Start your day with a free cup of Costa coffee and a conversation to wake the senses!

Do you know where coffee came from, and how it took over the world? This fun discussion considers the social and cultural importance of our caffeinated friend, and is followed by the prize giving for the Costa Debate.

Ghaya Khalfan Saeed Al Dhahiri is the author of Voice of Al-Rashad, a lavishly illustrated book full of history, stories and poems about the important role coffee plays in the history and culture of the UAE.

Gennaro Pellicia is Costa Coffee’s ‘master of coffee’ – responsible for tasting all the coffee that comes to Costa’s roastery in London, his tongue is insured for £10 million.

Claudia Roden is one of the foremost writers on the anthropology of food and drink; in Coffee: A Connoisseur’s Guide she brought her unique approach to coffee’s fascinating story.

This panel is moderated by Aida Al Busaidy.

This session will be followed by the Costa Debate Prize Giving.

Mark Kurlansky is a master of explaining the world from the perspective of something seemingly innocuous – most famously in his bestselling books Cod and Salt.

In his book Paper: Paging Through History he digs deep into the story behind the now-ubiquitous writing material that made the modern world possible, from its early origins in China, through the print revolution and into the digital age, where people are still finding new uses for it despite the rise of computers.

Tracing insights through Paper, his latest book Havana: A Subtropical Delirium, and his other surprising histories, you’ll find Mark’s eternal curiosity is catching.

Does the food on our plate have its own story to tell? Our panel discusses the historical and cultural significance of national dishes, the forces that cause different cuisines to evolve, and the impact of globalisation on our tastes.

Madhur Jaffrey is a world authority on Indian food, and through books such as Curry Easy has introduced aspiring cooks to the varied cuisines of India.

Mark Kurlansky is the author of Cod and Salt, books that show how food shaped global trade and human history, and International Night, a collection of international recipes he and his daughter cooked together.

Claudia Roden approaches the food of the Middle East and Mediterranean as an anthropologist: her recent book The Food of Spain explores the history and culture of the regional cuisines featured.

Melissa Hemsley is the author of Eat Happy: 30 Minute Feel Good Food. As one half of Hemsley + Hemsley, she promotes healthy eating using natural ingredients of good provenance.

Mira Manek champions healthy, vegetarian home-cooked food, and her cookbook Saffron Soul collects her fresh and lighter take on Indian food.

Stephen Ritz is the teacher who turned the Bronx green, bringing about a revolution in children’s classrooms and school dinners alike by turning classrooms into gardens. He received the 2017 International Food and Sustainability Award from the G7.

Ken Hom is widely regarded as one of the world’s greatest authorities on Asian cooking. His wildly popular books have inspired millions of home cooks, and he paved the way for a generation of celebrity chefs.

His autobiography My Stir-Fried Life tells the inspirational story of his rise from childhood work in his uncle’s restaurant in Chicago to international stardom. It also features a number of his favourite recipes, which will be served in a delicious three course dinner after the talk.
